Method:
Three layered side of filter paper against spout
Rinse filter
Grind coffee
Make well in centre of coffee using end of spoon
Bloom for at least 45 seconds
2 pours
Little stir
Give it a swirl at the end
Should take 3-4 mins total
Ratios:
3 cups
45g coffee
750ml total water:
90-130ml bloom
330ml first pour
750ml second pour
2 cups
30g coffee
500ml total water:
60-90ml bloom
280ml first pour
500ml second
Iced
64g coffee
400g ice in bottom of chemex
600g 90degree water
120ml bloom - 45 secs at least
3-4 mins pour
Stir and wait for drawdown
Swirl till ice melted
Serve over ice
