Welcome to the coffee cheat sheet! Everything you need to know to make a killer pour over is here.


At St Saviour’s we have two ways of making coffee - V60 and chemex - and they both use the same method. Read our how to below and follow the recipe.

1-2 cups = v60
3-4 cup = smaller chemex
5 cups = larger chemex

The recipe:

The recipe we work to is 1 part coffee to 16 parts water. This equals:

1 cup // 15g coffee // 250ml total brew
2 cups // 30g coffee // 500ml total brew
3/4 cups //
52g coffee // 800ml total brew (max ml of kettle)
5 cups // 75g // 1200ml total brew (you will have to refill kettle half way through)

The method:

  1. Boil kettle and grind coffee on setting 4 1/3

  2. For v60, put filter paper in v60. For chemex, open and place filter with thick (3 layers of paper) side against spout. Put it on the scale

  3. Rinse filter with boiled water and discard waste water

  4. Add coffee grounds and make a well in the centre using end of spoon

  5. Tare scale, start timer. Pour enough water (2x or 3x the weight of the coffee) to wet all coffee grounds. Wait 30 seconds

  6. Add the rest of the water to reach the total brew amount in two batches. Don’t let the grounds dry out

  7. Immediately after the second pour, stir grounds 1x anti-clockwise and 1x clockwise to release them from the sides of the filter. Over-stirring produces an acidic tasting coffee, so let it do it’s thing

  8. Let finish filtering, give it a swirl and serve :-)

Iced coffee recipe:

Use the same method as above, but measure ice into the bottom of chemex, or v60 glass server:

1 cup // 16g coffee // 100g ice // 150g 90degree water
2 cups // 32g coffee // 200g ice // 300g 90degree water
4 cups // 64g coffee // 400g ice // 600g 90degree water


The last step

Once you’ve served coffee, pour any extra into one of the flasks for others who may come in soon. Discard after two hours and make a fresh batch once people arrive.

Make sure to keep everything clean, brush coffee grounds away from the grinder, rinse the v60 and chemex with hot water after every use. The cleaner the coffee bar and equipment is, the more relaxed visitors will feel getting a coffee.
